Ise Suikou White Tea (Benihomare)
There's a saying: white tea becomes white tea in one year, medicine in three years, and a treasure in seven years.
This is a芽葉茶 (meyōcha - bud and leaf tea) from May 2025, hand-picked with only one bud and a tiny leaf. Exactly one year has passed, and it has become very mellow and delicious. The variety is "Benihomare." It's an Indo-Assam type tea tree, the first registered Japanese black tea variety, and its new buds are covered in silvery down.
It can be brewed deliciously in a small teapot of about 120-150cc, or a gaiwan.
Rather than brewing with boiling water, we recommend brewing at a slightly lower temperature, or making cold brew or sparkling cold brew.
● When brewing with hot water
Warm the tea ware beforehand, then add 3g of tea leaves.
Pour in water at around 80 degrees Celsius and brew for about 2 minutes, then pour into a teacup or cha-hai (pitcher).
Adjust brewing time from the second infusion. You can enjoy several infusions.
● When making cold brew or sparkling cold brew
For 500cc of water or sparkling water, add 4-5g of tea leaves and refrigerate overnight to extract slowly. After drinking, you can refill with water and enjoy again.
For an easy way to enjoy, we also recommend a casual style where you put tea leaves in a large teacup or your personal bottle, add lukewarm water, and drink as the tea leaves slowly sink.
You can enjoy it by adding more hot water.
